Description
NZ spinach thrives in well-drained, reasonably fertile soil but can tolerate a variety of conditions, even growing well in salty soil near beaches and estuaries. It prefers full sun or partial shade.
Good companion plants include peas, beans, strawberries, and coriander. Sow in spring or summer, soaking seeds in warm water for a few hours before planting. Place 4 seeds per mound, about 50 cm apart. Since germination can be a bit unpredictable, sowing multiple seeds in each spot increases the chances of getting 1-2 successful plants. It requires minimal care and can be enjoyed for its succulent leaves, either raw in salads or cooked like other spinach varieties.
